Stuffed Chicken Breasts

Y'all. This meal is seriously MY FAVORITE. I've shared it with so many friends and family members because once they had it, they had to have it again. And once again, my son LOVES it. It's one of his favorite, sure thing kinda meals. I add loads of spinach and chopped sundried tomatoes (seriously recommend these!) and when I'm in a rush, I half the breasts and spoon the filling over the chicken instead of filling and it really is just as good. We love to serve this with green beans.

Quinoa Crusted Chicken Tenders

Hands down, the easiest meal I make regularly! We loce a one pan dinner and clean up. It can be as healthy as you want it to be, and so customizable for a crowd. We serve ours with limes, jalapenos, cheese, sour cream, shredded lettuce, and sometimes tortillas with rice!
